This was one of hotelier Jeff Klein’s first properties that celebrated the idea of less-is-more, the idea a hotel could be a pied-a-terre of sorts and not feel like a giant, old convention center many mega-hotels feel like today. so let me begin this series with hamburgers, one of my all-time favorite simple meal. i am a huge fan of organic grass fed beef. the life of an organically grass fed cow is it just grazing on the pasture eating grass and hay (its natural diet) that hasn't been treated with chemicals. grass fed beef doesn't contain hormones and IF the cattle has been treated a little with antibiotics, to be "organic grass fed" it must be flushed completely i have finally embraced the simplicity in which i prepare my meals. although i can enjoy complex dishes and intricate flavors,
